Mosgaard Palo Cortado Cask took its first steps toward the finished product several years ago. We had the casks built from American white oak, got them medium toasted, and aged them with Palo Cortado sherry.
The Palo Cortado sherry that has matured in the casks is no ordinary sherry. It is a sherry that Gitte and Jes Mosgaard have blended themselves in Spain. The sherry has been in the casks for 1.5 years and penetrated as deeply into the wood as possible - thus maturing the cask to be able to make Palo Cortado whisky. When the casks were mature, the sherry went on, and we got the casks to Denmark, and they were filled with New Spirit.
The Palo Cortado whisky is now finally matured and ready for bottling. It has become an elegant Palo Cortado aged whisky, with intense flavor notes of malt, caramel, grapes, marzipan, lemongrass, bitter oranges, plums, and green apples.
Mosgaard Palo Cortado whisky is bottled at a strength of 53%, which gives it a pleasant fullness, and exactly at that alcohol strength, there is a balance of the spicy malt and the green citrus notes.
Palo Cortado is an exciting sherry, which today typically starts its production as an Amontillado that is made from the first part of the juice when the grapes are pressed, which gives the fine nose with the typical orange citrus notes. During the end of fermentation, a stronger sherry with a higher alcohol percentage is added, which protects against too much oxidation during storage. The result for Palo Cortado is sherry with the nose from Amontillado and the body from Oloroso.
